Asian Turkey Salad

For the salad
Cooked turkey
1 carrot, thinly sliced
100g radishes, halved
Thai basil, chopped
1 red chilli, sliced
½ Chinese cabbage, shredded
1 red onion, thinly sliced
1 cucumber, deseeded & thinly sliced
200g baby tomatoes, halved
Mint, roughly chopped
Coriander, roughly chopped
50g peanuts, roughly chopped
For the dressing
Garlic cloves, grated
Chillies, finely chopped
Juice of 2 limes
Palm sugar
Soy sauce
Fish sauce
Ginger, grated
1. Combine all of the salad ingredients in a bowl and combine. Season to taste.
2. Place the salad in your serving bowl/plate.
For the dressing:
1. Combine all of the ingredients in a bowl and mix thoroughly and season to taste.
2. Drizzle the dressing over the salad and serve.
