Atole pinon hotcakes

560g plain flour
180g blue cornmeal, ground
55g baking powder
50g granulated sugar
1/2 tbsp salt
2 large eggs
115g soy oil, or vegetable oil
1.4L milk
115 to 170g roasted pine nuts, shelled
Hot maple syrup, for serving
Whipped butter, for serving
1) In a large bowl, mix all the dry ingredients together. In a separate bowl, mix the eggs and oil.

2) Add the milk and dry ingredients to the egg and oil mixture. Mix until batter is smooth, but still lumpy, being careful not to over mix.

3) Cook on a hot pan. Prior to flipping the hotcake, spread the pine nuts evenly throughout.

4) Serve with hot maple syrup and whipped butter.
