Jonathan Phang's Bahama Mama

80ml Kahlua
160ml dark rum
160ml Mahiki (coconut liqueur)
80ml Bacardi (151 proof rum)
360ml pineapple juice
Juice of 3 limes

For the garnish

2 egg whites, beaten
75g caster sugar
Marachino cherries
Pineapple wedges
Cocktail umbrellas

Place all ingredients into a large jug and mix well.

For the glasses, dip the rim of the glasses into the beaten egg white and then into the caster sugar. Fill with ice and then top up with the Bahama Mama.

Garnish the glasses with a wedge of pineapple and some maraschino cherries threaded onto the cocktail umbrella.
