Baked Steak and Blue Cheese Enchiladas

75g butter or margarine
1 Old El Paso™ Garlic & Paprika Taco Seasoning Mix
700g of beef sirloin steak, without the bone, cut into thin strips
1 can (435g) Old El Paso™ Refried Beans
8 Old El Paso™ Super Soft Flour Tortillas
200g Cheddar cheese, grated
100g blue cheese
3 shallots, thinly sliced
1 jar of Old El Paso™ Thick ‘n’ Chunky Mild Salsa (or Hot if you’d prefer)

Heat oven to 180?C (160?C for fan assisted ovens), gas mark 4.

Melt the butter in a large pan and stir in the Garlic & Paprika Taco Seasoning mix.

Add the beef strips and cook for 2-3 minutes, stirring occasionally until cooked to your liking; drain any excess fat.

Meanwhile, put the refried beans in a small pan and heat gently.

Spread each tortilla with refried beans and top with beef, Cheddar and shallots.

Roll up tightly and place folded side down into a baking dish, and then pour the salsa over the top of the burritos and sprinkle with blue cheese.

Bake uncovered for 10 to 12 minutes or until enchiladas are hot throughout and the cheese has melted.

To serve, place burritos on plate and enjoy.
