Bayu Wiseso Pandu Resi's Gin and Juice

Bayu Wiseso Pandu Resi represented Indonesia at the World Class Bartender of the year final, 2013.

45ml Tanqueray No.Ten
15ml Campari
30ml sweet and sour mix
30ml fresh pink grapefruit juice
5ml pomegranate syrup
1/4 wedge pomelo
A twist of orange zest to garnish

To make your own sweet and sour mix, add 2 tablespoons of sugar to 225ml of lemon juice and stir.

Muddle all the ingredients together. Strain into a highball glass with ice.
