Beetroot and mandarin orange salad with mint

250g tinned mandarin oranges, drained, 2 tbsp juice reserved
30ml olive oil
30ml red wine vinegar
450g tinned sliced beetroot, drained
1 sprig mint, leaves torn
1) In a mixing bowl, combine the mandarin juice, olive oil and red wine vinegar. Add beetroot and oranges and toss to combine. Garnish with torn mint.
