Big Jim's meatballs

1kg minced beef
2 eggs
100g panko (japanese) breadcrumbs
1 tbsp garlic powder
1 tbsp dried basil
2 tsp dried oregano
1 tsp salt
1 tsp freshly ground black pepper
25g grated Romano cheese
1) Preheat the oven to 200C/Gas 6. Mix all the ingredients in a bowl and mix with hands until well blended.

2) Form the beef mixture into balls about 90 to 125g each. Place in a greased baking dish, cover with foil and place in the oven for 25 minutes.

3) Check to make sure the meatballs have cooked completely through. Remove the foil and place back into oven for 10 minutes or until lightly browned.

4) Remove the meatballs from the oven and leave to sit for 15 minutes to let some of the juices absorb back in to the meatballs. Drain off the remaining grease and serve with your favourite pasta and sauce.
