Black bean salad

2 tins black beans, drained, about 850g
1 (425g) tin corn, drained
2 plum tomatoes, diced
50g diced red pepper
25g diced red onion
25g diced spring onions
25g diced pineapple
1 tbsp chopped coriander leaves
1 jalapeno, seeded and minced
60ml sherry vinegar
Juice of 1/2 lime
3 tbsp honey
1 tbsp salt
1 tsp black pepper
Pinch ground cumin
1) Mix all ingredients in a large serving bowl.

2) Cover and refrigerate for 1 hour before serving.
