Blue Cheese Dressing

250ml mayonnaise
50g crumbled Maytag or other blue cheese, divided
125ml light cream
2 tbsps sour cream
1 tbsps freshly squeezed lemon juice
1/4 tsp Worcestershire sauce
1/2 tsp salt
Freshly ground black pepper
1) In a medium bowl, whisk together the mayonnaise, half of the blue cheese, semi-skimmed milk, sour cream, lemon juice, Worcestershire, and salt, until smooth.

2) Gently stir in the remaining blue cheese and season with pepper to taste. Use now or store in the refrigerator for up to 3 days.
