Blueberry Muffins

100g baker's bran
260g wholewheat flour
4 tsp baking powder
2 tsp bicarbonate of soda
Pinch of salt
480ml natural yoghurt or buttermilk
2 eggs
100g soft brown sugar
3-4 tbsp rapeseed oil
2 tsp vanilla extract
2 tbsp runny honey
400g blueberries

Preheat the oven to 190°C and line a 12-hole muffin tin with large paper muffin cases.

Mix the bran, flour, baking powder, bicarbonate of soda and salt together in a large mixing bowl.

Pour the yoghurt, eggs, sugar, oil, vanilla extract and honey into a large jug. Whisk until smooth, then make a well in the centre of the flour and pour the mixture in. Mix well and then add the blueberries. Stir together, taking care not to over mix.

Divide the mixture between the muffin cases and bake in the preheated oven for about 25 minutes until risen and golden.
