Bottom of the jar jam vinaigrette with chopped greens

1 rounded tbsp orange marmalade, seedless raspberry, grape or strawberry jam or jam - scrape the bottom of the jar
2 tsp dijon or spicy mustard
2 tbsp white wine vinegar or juice of 1 lemon
50ml extra-virgin olive oil
2kg chopped greens and any vegetables you have on hand
Salt and freshly ground black pepper
1) To the bottom of an almost-empty jam jar, add the other ingredients and shake to combine. Or, in a salad bowl, whisk together the jam, mustard, and vinegar. Slowly whisk in the olive oil until emulsified. Toss with lettuce and vegetables and season with salt and pepper.
