Brandy Cream
Orange zest and creme fraiche are used to lighten up this indulgent cream.

250ml double cream
50g crème fraiche or Greek yoghurt
50g sifted icing sugar
1 tbsp brandy
1 tbsp Grand Marnier
Zest of 1 orange
Add the first five ingredients into a measuring jug, stir to combine and taste.
Add more icing sugar to taste if needed. Use a hand blender to whizz until smooth (do not over whip or else the cream will thicken) then zest in the orange, stir and keep in a jug in the fridge until needed.
