Brooke's homemade meatloaf

For the glaze

50ml ketchup
1 tbsp Dijon mustard
2 tsps packed light brown sugar

For the meatloaf

900 g beef mince
1 medium onion, finely chopped
3 tbsps ketchup
2 large eggs
1 slice white bread, torn into pieces
1 tsp salt
3/4 tsp freshly ground black pepper

1) Preheat the oven to 180 degrees C.

2) In a small bowl, whisk together all the glaze ingredients and set aside.

3) In a large bowl, combine all the meatloaf ingredients and mix well. Press the mixture into a 22 by 12 cm loaf pan. Bake for 30 minutes. Remove from the oven and brush some of the glaze over the top of the meatloaf. Bake for 30 minutes more.

4) Remove from oven and let stand for 5 minutes. Turn the meatloaf out onto a serving platter and spoon the remaining glaze over the top before serving.
