Cherry, almond and cinnamon granola

360g old-fashioned rolled oats
150g sweetened, dessicated coconut
150g flaked almonds
225g dried cherries, chopped
120ml vegetable oil
100g good honey
2 tsp ground cinnamon
1) Preheat the oven to 180C/Gas mark 4.

2) Toss the oats, coconut, almonds and cherries together in a large bowl. Pour in the vegetable oil and honey, add the cinnamon and stir with a wooden spoon until all the oats and nuts are coated with the liquids.

3) Pour the mixture onto a sheet baking tray. Bake, stirring occasionally with a spatula, until the mixture turns a nice, even golden brown, about 25 to 30 minutes.

4) Remove the granola from the oven and allow to cool, stirring occasionally. Store the cooled granola in an airtight container.
