Chilean salsa for BBQ: Pebre

225g peeled, seeded, and diced tomatoes
10g chopped fresh coriander leaves
2 tsp. olive oil
1 tsp. chopped garlic
1 tsp. red wine vinegar
1 jalapeno, finely chopped
1 spring onion, finely chopped
Salt and black pepper
1) Mix all the ingredients together in a bowl. Best if the salsa is made the same day it will be served.
