Chiles Relenos In Tomato Broth Recipe

8 large red chillies
6 large eggs, separated
Vegetable oil, for frying
1 litre chicken stock
1 sprig fresh coriander, plus leaves for garnish
1 cinnamon stick
2 small bayleaves

2 cloves garlic, crushed
1 small onion, roughly chopped
675 tomatoes, deseeded and roughly chopped
350g mild cheddar cheese, cut into 8 sticks

Pre-heat the grill to a high heat. Place the chillies onto a foil-lined grill rack and grill, turning, until the skins char, about 8 minutes. Place in a bowl, cover with cling film and leave to cool, about 10 minutes.
