Chimichurri

240ml red wine vinegar
120ml vegetable oil
120g peeled, seeded, and diced tomatoes
120g diced red pepper
120ml warm water
4 tsps finely chopped fresh Italian parsley leaves
2 tsps salt
2 tsps finely chopped garlic
1 tsp sweet paprika
1/2 tsp ground cumin
1/2 tsp dried thyme
1/2 tsp dried oregano
1/2 tsp chilli flakes
1/2 tsp ground black pepper
1 spring onion, chopped
1 large bay leaf, broken into small pieces
1) Combine all the ingredients in a small bowl, mix together, and cover.

2) Prepare well before the meal is to be served in order to allow flavors to blend.
