Cinnamon sugar fry bread

2 packages pizza dough, 225g to 285g
475ml vegetable oil
3 tbsp ground cinnamon
100g caster sugar
160g fruit preserves, for dipping
1) Remove the dough from the refrigerator and leave to rise in an oiled bowl until doubled in size. Roll the dough out to reach about 20 to 25cm.

2) In a large saute pan add about 2.5cm of oil and heat to 180C. Meanwhile mix the cinnamon and sugar together.

3) With a pizza cutter or knife cut the dough into 2.5cm by 10cm pieces. Drop the pieces in the hot oil and cook for 2 mins on each side or until golden brown.

4) Remove the cooked pieces to kitchen towels to drain and dust with cinnamon and sugar mixture while still hot.

5) Serve warm with fruit preserve dipping sauce.
