Clams oreganata

Serve these grilled clams in their shells, steadied with rock salt.

50g plain dry bread crumbs
2 tbsps chopped fresh oregano
1 tbsp chopped fresh parsley
1 tbsp chopped fresh mint
120ml extra-virgin olive oil, plus extra for drizzling
Salt and freshly ground black pepper
12 shucked Manilla clams, shells reserved
Coarse salt, for lining baking tray
1) Preheat the grill.

2) In a large bowl gently toss bread crumbs, herbs, olive oil, salt and pepper. Be careful not to overwork the mixture. Set aside.

3) Line a baking tray with salt and arrange 12 clam shells on it. Put one clam in each shell and top with 2 tablespoons of the bread crumb mixture. Drizzle with olive oil. Grill for two to three minutes.

4) Serve immediately.
