Classic salad with chicken

For the croutons

1 whole-wheat roll (about 55g) preferably day old, cut into 1cm chunks
10ml olive oil
1/4 tsp salt
1/4 tsp pepper

For the bacon bits

Cooking spray
3 slices back bacon (85g) finely diced

For the dressing

85ml plain non-fat yoghurt
30ml mayonnaise
30ml ketchup
10ml white vinegar
2 tbsp chopped sweet gherkins

For the salad

1 large head green-leaf lettuce (about 500g) shredded
2 medium tomatoes, seeded and diced
1/2 small red onion, thinly sliced
1/2 cucumber, sliced
350g griddled chicken breast, sliced
For the croutons:
1) Preheat oven to 180°C.

2) Toss bread cubes with olive oil, salt and pepper and place on a baking tray. Bake until croutons are golden and crisp, about eight minutes. Remove from oven, and allow to cool completely.

For the bacon bits:
1) Spray a nonstick pan with cooking spray and heat over medium-high heat. Add bacon and cook until crisp, stirring frequently, about 4 to 5 minutes.

2) Allow to cool.

For the dressing:
1) Combine the yoghurt, mayonnaise, ketchup, vinegar and gherkins in a bowl and stir to incorporate. Season with salt, to taste.

For the salad:
1) Toss the lettuce, tomato, onion, and cucumber in a large salad bowl with the dressing.

2) Top with croutons, bacon bits, sliced chicken and serve.
