Cointreau and Raisin Tiffin Bars
These tiffin bars are stunningly simple and totally delicious.

This delicious chocolate tiffin is stuffed full of orangey flavour and juicy raisins. Perfect as a snack with a big mug of tea cosied up by the fire this winter.
You will need a square baking tin, approx. 15 x 22cm – lined with baking paper. The larger the tin, the shallow the tiffin bars, the smaller the tin you have, the deeper the bars.
Bring the Cointreau to the boil in a small saucepan and remove it as soon as it starts to bubble. Pour in the raisins and leave to soak.
In a heatproof bowl over gently simmering water, break up your chocolate and melt until perfectly smooth.
In a separate large bowl empty in your packet of Digestive biscuits and crush to crumbs with the flat end of a rolling pin. Zest the oranges into the bowl then with a slotted spoon, pull the raisins out of the alcohol and place in with the crumbs. Pour over the melted chocolate and mix well until everything is covered in chocolate evenly.
Pour into your lined square tin and place in the fridge for one hour. Then remove and cut into bars and serve with a big mug of tea.
