Corn con queso

30g butter
1 tbsp ground cumin
1 tbsp paprika
1 tsp cayenne pepper
2 tbsp chopped coriander leaves
Freshly ground black pepper
4 corn on the cob
Queso fresco cheese
Lime wedges
1) Heat the oven to 190C/Gas 5. Combine the butter, cumin, paprika, cayenne pepper, coriander, salt and pepper, to taste.

2) Rub the sweetcorn with the butter mixture, wrap in foil and put in the oven. Cook for 20 to 25 minutes.

3) Unwrap from foil, top with queso fresco and a squeeze of lime; serve immediately.
