Corn dressing for southern fried chicken

600g sweetcorn
2 tbsp minced garlic
500ml buttermilk
1L ranch dressing
4 spring onions, diced
1) In a medium saute pan over low heat, add the corn and the garlic and stir together until heated through. Put the corn mixture into a blender and finely chop.

2) Add the buttermilk, ranch dressing and spring onions to a large bowl. Stir in the corn mixture and serve over fried chicken.
