Cowboy steak with coffee and chilli rub

1 1/2 tsps ancho chilli powder, or other chilli powder
1 1/2 tsps fine ground espresso coffee
1/2 tsp brown sugar
1/4 tsp dry mustard
1/4 tsp ground coriander
1/4 tsp salt
1/4 tsp freshly ground black pepper
550g shoulder center steak, or top sirloin, about 3cms thick
1) Spray a large nonstick frying pan with cooking spray and preheat it over medium-high heat.
2) In a small bowl combine all the ingredients for the rub and coat the steak well on both sides.
3) Cook steak for 14 minutes, turning once, for medium to medium-rare. Allow steak to sit for 5 minutes before slicing and serve.
