Cranberry muffin

10 whole eggs
240ml oil
450g butter, softened
115g vegetable fat
10g salt
450g caster sugar
45ml vanilla essence
1/8 tsp butter flavouring
40g baking powder
510g strong flour
165g whole fresh cranberries
1) Preheat the oven to 170C/Gas Mark 3.

2) Mix all ingredients for 10 mins, but don't over-mix (leave some lumps). Pour into 2 large muffin trays. Bake for 30 mins or until golden brown and a tester inserted in the middle comes out clean.
