8 tbsps good olive oil
15ml red wine vinegar
1/2 tsp Dijon mustard
1/4 tsp honey
1 tsp salt
1/4 tsp freshly ground black pepper
10g minced shallot
115g mesclun mix
1) In a small bowl, whisk together the oil, vinegar, mustard, honey, salt, pepper and shallots until the vinaigrette is emulsified.

2) Toss the greens with enough dressing to moisten and serve immediately.
