Creamy wild rice

15g unsalted butter
10g diced carrot
10g diced celery
10g diced onion
10g diced red pepper
20g diced crimini mushrooms
1/2 tsp salt
1 tsp freshly ground black pepper
1/4 tsp cayenne pepper
240ml double cream
390g cooked wild rice
30g whole-grain mustard
5g chopped Italian parsley leaves
1) In a small saucepan over a medium heat, melt the butter. Add the vegetables and saute for 4 to 5 mins. Season with the salt, black pepper and cayenne.

2) Stir in the cream and add the cooked wild rice and the mustard. Combine well and reduce the heat. Simmer until the cream has thickened, about 5 to 7 mins.

3) Adjust the seasoning, if necessary, stir in the parsley and serve immediately.
