Cuban beans

1.4L water
350g dried red beans
2 ham hocks
3 tbsp oil
2 white onions, diced
6 garlic cloves, diced
2 green peppers, diced
2 tbsp ground cumin
2 tsp paprika
2 tbsp dried oregano
2 tbsp freshly ground black pepper
2 tbsp salt
1) Add the water, beans and ham hocks to a large pan. Boil for 45 mins until the meat is tender.

2) Put the oil, onions, garlic, peppers, cumin, paprika, oregano, and pepper into a medium saucepan and saute until the onions are translucent, do not brown.

3) When the bean mixture has reduced by half, add the onion saute mixture and the salt. Continue to reduce until water is level with the top of the bean mixture. Keep warm for serving.
