Cucumber Raita

This cucumber-packed raita will cool down any spicy dish.

1 cucumber, grated
350ml Greek yoghurt
1/4 a bunch mint, leaves picked and finely chopped
1 1/2 tsp cumin seeds, roasted and ground to a powder
1/2 lemon, juiced
Salt, to season

Once the cucumber has been grated, squeeze it to remove as much liquid as possible. Place into a bowl and add the remaining ingredients.

Season with salt to taste, mix well and serve immediately.
