Cucumber raita

450ml of plain unsweetened natural yoghurt
Juice of 1 lemon
1 cucumber, roughly chopped
1 tsp ground cumin
2 tsp salt
4 grinds black pepper
1) Combine all ingredients in a food processor and mix for 2-3 seconds ensuring that the cucumber is still chunky. The raita should be nice and creamy from the yoghurt but still have texture from the cucumber.

2) Refrigerate until required.
