Curried chicken sandwich with radicchio and pancetta

220g thinly sliced pancetta, about 8 slices
800g diced roasted chicken
270g shredded radicchio
150ml mayonnaise
1 tbsp curry powder
1 tbsp lime juice
2 tsp honey
1 1/2 tsp finely chopped ginger
4 ciabatta rolls
1) In a large frying pan, fry the pancetta slices over high heat until crispy. Remove from the pan and set aside.

2) In a large bowl combine the chicken, radicchio, mayonnaise, curry powder, lime juice, honey, and ginger and mix well.

3) Halve the ciabatta rolls, spoon the chicken mixture onto the bottom halves, top with the crispy pancetta and serve.
