Curried egg salad

6 hard boiled eggs
1 stick of celery, finely chopped
1/2 red bell pepper, seeded and finely chopped
1 rounded tsp Dijon mustard
65ml mayonnaise
2 cloves of garlic, toasted and chopped
2 tsp curry powder
Salt and pepper, to taste
1 ciabatta, sliced in thirds and halved
1) In a large bowl mash eggs with a fork. Stir in chopped celery and red pepper.

2) In a separate bowl mix together the mustard, mayonnaise, garlic, curry powder, salt and pepper.

3) Add the dressing to the eggs and mix well.

4) Divide the mixture evenly between the ciabatta slices and serve.
