Deep-fried crabs

Oil, for frying
4 soft-shell crabs
320g white cornmeal
1 tsp salt
Freshly ground black pepper

1) Preheat frying oil to 180C/Gas 4.

2) Parboil crabs for 10 mins. Roll in cornmeal mixed with salt and pepper.

3) Fry until golden brown for about 2 to 4 mins.
