Fennel, Mushroom and Red Onion Salad

For the salad:

3 small tender fennel bulbs thinly sliced
1 medium red onion thinly sliced
150g baby button mushrooms sliced
75g shaved parmesan cheese
2 tbsp deep fried capers
Small handful Italian parsley chopped

For the dressing:

1 large clove garlic crushed
1 heaped tsp Dijon mustard
Salt and pepper to taste
1/3 cup red wine vinegar
2/3 cup olive oil

1. Shake all the dressing ingredients together in a jar.

2. Place all the salad ingredients into a bowl, dress with dressing stir to coat, pile onto a platter and serve.

3. Pile onto a platter for the table
