Feta Cous Cous Salad

200g cous cous
200ml boiling water
100g feta cheese, crumbled into chunks
110g pomegranate seeds
4 spring onions sliced
1 heaped tbsp chopped coriander
1 heaped tbsp chopped parsley
1 heaped tbsp chopped mint
Olive oil
Salt and pepper

1. Pour the boiling water over the cous cous, cover with cling film and set aside for about 5 minutes until absorbed. Fluff up the cous cous with a fork and drizzle a glug of extra virgin olive oil through it.

2. Add the other ingredients and toss through with your hands. Season and serve.
