Garam Masala

8 bay leaves
6-8 cinnamon sticks
25g coriander seeds
25g cumin seeds
1 tbsp fennel seeds
1 tbsp black peppercorns
1 tbsp cloves
2 tbsp green cardamon pods
4-6 black cardamon pods
4-6 star anise
8-10 blades of mace
1-2 tbsp dried rose petals

Lightly toast all ingredients, in a dry frying pan till they release their aroma (except the rose petals). Allow to cool, and then grind together with the rose petals.

Keep in a sealed jar until needed.
