Ginger collins

30ml gin
1/2 tbsp ginger liqueur (recommended: Domain de Canton)
60ml fresh lemon juice
30ml simple syrup (equal amounts water and sugar heated until sugar dissolves; cool)
Club soda
Lime wedge, for garnish
Crystallized ginger, for garnish
1) Add the gin, ginger liqueur, lemon juice and simple syrup to an ice-filled Collins glass.

2) Top with club soda and stir. Garnish with a lime wedge and a skewer of crystallized ginger.
