Griddled hearts of cos

2 hearts cos lettuce
2 tbsp. olive oil
Salt and freshly ground black pepper
1) Preheat the griddle or a griddle pan.

2) Cut each heart of cos in half lengthwise, leaving the end intact so each half holds together. Brush with olive oil and griddle over medium heat, turning occasionally until the lettuce chars and wilts, about 6 minutes. Season to taste with salt and pepper and serve.
