Griddled honey-orange figs with mascarpone and pistachios

4 tbsp. honey, divided
60 ml fresh orange juice
12 fresh figs, halved
30 cm wooden skewers, soaked in water for 30 minutes
500g mascarpone
30g chopped pistachios
1) Heat griddle to medium heat. In a small bowl, whisk 3 tbsp. of honey and the orange juice until well combined. Brush the honey-orange mixture generously over the figs and skewer them.

2) Griddle, cut side down, until they begin to caramelize, about 30 seconds to 1 minute. Transfer to a serving plate and drizzle with remaining honey. Top with a dollop with mascarpone and sprinkle with chopped pistachios. Serve.
