Griddled red pepper-tomato sauce

2 red peppers, grilled, peeled and chopped (about 300g)
2 plum (roma) tomatoes, grilled until charred on all sides, and coarsely chopped (about125g)
30 ml red wine vinegar
15 ml honey
20g fresh coriander leaves, chopped
60 ml olive oil
Salt and freshly ground black pepper
Combine the pepper, tomatoes, vinegar, honey and cilantro in a food processor and process until smooth. With the motor running, slowly add oil and season to taste with salt and pepper.
