Grilled herb prawns

1kg large prawns, peeled and deveined
3 cloves garlic, minced
1 medium yellow onion, small-diced
20g fresh parsley, minced
20g fresh basil, minced
1 tsp dry mustard
2 tsp Dijon mustard
2 tsp salt
1/2 tsp freshly ground black pepper
4 tbsp good olive oil
1 lemon, juiced
1) In a large bowl combine all the ingredients and allow them to marinate for 1 hour at room temperature or cover and refrigerate for up to 2 days.

2) Skewer the prawns, using 3 or 4 prawns on each 30cm skewer. Preheat the griddle and brush with oil to prevent the prawn from sticking.

3) Barbeque or griddle the prawns for around 1 1/2 minutes on each side.

Cook's note: I leave the tails on when I'm peeling the prawn.
