Guy's gumbo shack: Red beans and rice

25g butter
200g diced green pepper
200g chopped onion
5g chopped garlic
2 tbsp sugar
1 tbsp salt
2 tbsp black pepper
2 tbsp oregano
2 tbsp dried basil
1 tbsp dried thyme
2 bay leaves
60ml red wine vinegar
500g to 1kg smoked sausage
2.5kg tinned dark red kidney beans
Cooked white rice, for serving
1) Melt the butter in a large saucepan. Add the green pepper, onion, garlic, sugar, salt and pepper, all the herbs, the vingegar and the sausage. Saute until the vegetables are soft.

2) Add the beans and cook for 30 minutes over a medium heat. Use a hand blender or potato masher to mash beans until only about 50 percent of them remain intact.

3) Serve the gumbo hot over cooked white rice.
