Hot apple ginger toddy

175ml pressed apple juice
3-4 thin slices of peeled fresh ginger
1 tsp. honey
60ml bourbon (Maker's Mark or Jim Beam are preferred)
Slice of lemon
1) Bring the apple juice to a boil in a non-aluminium pan. Add the ginger. turn the heat off and allow to stand for 30 minutes.

2)Put this mixture in a blender and pulse until smooth. Strain through cheesecloth or fine sieve. Refrigerate until ready to use.

3)To make your ginger toddy: Heat the ginger-infused juice, but do not boil. Add the bourbon and stir in honey. Pour into a coffee mug, garnish with lemon and serve.
