225 g rice, regular or instant, cooked according to package directions
Cooked prawns, halved, about 340 g
225 g diced pineapple
225 diced fresh papaya or mango
60 g chopped spring onions
2 tbsps fresh lime juice
2 tsps olive oil
Salt and freshly ground black pepper

1) Combine all ingredients in a large bowl and toss to combine with a spoon. Serve immediately.
