Jarred Salad with Mediterranean Dressing

1 baby cucumber cut into slices (equivalent of half a cucumber)
1/2 red onion, thinly sliced
80g stuffed green olives
80g kalamata olives, pitted
200g feta cheese, cubed

For the dressing: (use 1/4 cup per person)

1/2 cup red wine vinegar
6 tbsp olive oil
2 tsp fresh oregano
2 tbsp fresh basil
2 tsp fresh thyme
2 cloves garlic
1 tbsp finely chopped onion
1 tsp dijon mustard
1/2 tsp wholegrain mustard
2 tsp fresh parsley
1/2 tsp salt
1/2 tsp ground black pepper
1/2 tsp sugar, to taste

1. Place equal amounts of slices in two jars (400ml size). Followed by the red onion, olives and feta cheese.

2. For the dressing, add all ingredients to a blender. Mix until all pureed and there are no lumps.

3. Pour equal amounts over the salad. Close the lid of the jars and chill.
