Jerky turkey burgers with papaya salsa

600g minced turkey
1 garlic clove, minced
2 spring onions, thinly sliced
2.5cm ginger root, grated
2 tsp chopped fresh thyme leaves
1 tsp allspice
1/2 tsp freshly grated nutmeg
Salt and freshly ground black pepper
Extra-virgin olive oil, for drizzling
Juice of 1 lime
4 burger buns, split
4 lettuce leaves
For the Papaya salsa
1 large, ripe papaya, seeded, peeled and diced
1/2 red pepper, seeded and diced
1/4 red onion, finely chopped
1 serrano or jalapeno pepper, seeded and finely chopped
2 tbsp fresh coriander leaves, finely chopped
Juice of 1 orange
1) For the Burgers: Combine the turkey, garlic, spring onions, ginger, thyme, allspice, nutmeg, salt and pepper in a medium bowl. Form mixture into 4 large patties no more than 2.5cm thick. Drizzle the patties with a touch of oil.
2) Preheat a large nonstick frying pan to medium high heat. Place patties in the hot pan and cook for 6 minutes on each side.
3) Meanwhile make the Papaya salsa: Combine the papaya, red pepper, red onion, serrano or jalapeno, coriander and orange juice in a bowl. Season with salt to taste.
3) Squeeze the lime juice over the patties before removing them from the heat. Serve in buns topped with lettuce leaves and salsa.
