Brussels Sprouts with Smoked Ham and Pine Nuts

Smoky, salty ham and crunchy nuts bring out the best of the brussels.

200g brussels sprouts, finely sliced on a Japanese mandolin
50g toasted pine nuts
100g smoked ham, cut into lardons
1 garlic clove
Olive oil
Drizzle a little olive oil into a pan and heat. Add the brussel sprouts, the crushed garlic and cook for one minute. Add the ham and pinenuts and cook for one min. Season and serve.
