The Lady's Warm Potato Salad

8 medium red potatoes
20g chopped fresh parsley leaves
30g chopped spring onion tops
2 celery sticks, chopped
3 hard-boiled eggs, chopped
Half a small pepper, chopped
20g diced pimento
1 tsp lemon-pepper seasoning
2 tbsps salt
1 tbsp dijon mustard
50ml mayonnaise
200ml sour cream
1) Boil potatoes with skins for 10-15 minutes, until tender. Let cool just to the touch and cut into cubes.
2) In a large bowl, combine remaining ingredients. Add potatoes.
