Lentil biscuits

175g mixed lentils
240g butter
180g brown sugar
1 egg
110g wholemeal flour
1 tsp bicarbonate of soda
1 tsp vanilla essence
90g quick rolled oats
150g slivered almonds
150g pumpkin seeds
150g chocolate chips
1) Preheat the oven to 190C/Gas mark 5. Grease a baking sheet or use greaseproof paper.

2) Cook the lentils for 35 minutes in boiling water. Strain and crush with a fork.

3) Cream the lentils, butter and sugar together and then add the egg and blend. Add the flour, bicarbonate of soda, vanilla, oats, almonds, pumpkin seeds and chocolate chips. Mix well.

4) Drop spoonfuls of mixture on the baking sheet and flatten. Bake for 13 to 18 minutes and then allow to cool on a baking rack.
