Lychee martini

1 (20-ounce) can lychee fruit
2 ounces crushed ice
3 ounces lychee liqueur (recommended: Soho Brand)
2 ounces vodka
Splash lime juice
Splash Champagne

1) Pour can of lychee fruit into a strainer. Reserve 30ml lychee juice.

2) In a shaker, add crushed ice, lychee liqueur, vodka, lime juice and reserved lychee juice.

3) Shake well. Pour mixture into chilled martini glasses over a few pieces of lychee fruit from the tin. Add a splash of Champagne and serve.
